A Week’s Worth of Breakfast Ideas

breakfast ideasI spend most weekday mornings frantically trying to feed my girls breakfast, while getting us all dressed and ready, packing our bags, and hoping we’re on time for pre-school drop-off. As a mom, it’s so easy to skip breakfast, or just eat frozen waffles or pancakes, but neither of those options are my first choice. Instead, these easy ideas are my go-to breakfasts, and are almost guaranteed to make you feel more like an adult than a 4 year old!

Avocado Toast
This has been my favorite breakfast for the past couple of years. Most days, I just mash half of an avocado and add a little sea salt. Some days, I add olive oil and/or lemon juice, too. Our favorite bread is multi-grain Rustico Bread from Trader Joe’s… toasted, of course.

Peanut Butter Toast with Berries
We love Peanut Butter & Co. peanut butter, and I especially love The Bee’s Knees (peanut butter with honey). I spread a light layer on toast, and then slice a few strawberries or halve some raspberries, and add them on top.

Acai Bowl
There are many ways to make this, but the key is finding Acai purée packets. I blend mine with frozen strawberries, 1/2 banana, and some juice; be sure to keep it thick. Then, I top the bowl with the other 1/2 banana and granola.

Smoothies
In my family, we call smoothies by their color, instead of their ingredients. If I’m just making one for me, it’s usually “green” with spinach, mango, banana, and orange juice. My girls prefer “pink” or “purple” smoothies with yogurt, berries, banana, and either orange juice or almond milk.

Quiche
I’m the only one in my house who eats quiche, so when I have the chance to make one, it lasts me a few days. I buy pre-made pie crust, and then mix 6 eggs with 1 cup milk and the fillings of my choice. My favorite combinations are broccoli and cheddar, spinach and mozzarella, and asparagus and swiss.

Mini Croissants
We love the (frozen) mini croissants from Trader Joe’s. They also come in chocolate and almond. The only downside is that you have to remember to pull them out of the freezer the night before, so they have time to rise. In the morning, add an egg wash and bake for 15-20 minutes.
