Summer Fun with the Instant Pot

Summer is officially here and with that comes BBQ season, picnics, and lighter fare. Luckily, that doesn’t mean the Instant Pot gets put away. There are several great recipes to try with the Instant Pot this summer.

Sides 

These side dishes look like they’ll be a great addition to any BBQ this summer. The shrimp cocktail sounds amazing too! (Spoiler: you use beer to steam them).

I love warm pasta dishes from the Instant Pot and can’t wait to see how a pasta salad turns out!

Entrees

I personally cannot wait to make this Watermelon Rind BBQ Sauce, it sounds incredible! To be honest there is a lot of information about ribs and I haven’t tried those yet either, so that is a goal for the summer. The Lemon Risotto with Summer Squash and Summer Italian Chicken are going to be great to add those fresh veggies from the Farm Stands or Farmer’s Markets you find this summer.  

Drinks & Desserts

I have declared my love of my Instant Pot many times, but I have really only made one dessert, a peach cobbler. Which was good, but I forgot a very important tip, when making something sweet make sure your silicone ring is designated for sweets. If not your dessert may end up tasting like salsa/curry/marinara/teriyaki peach cobbler! 

Also, the Berry Compote would be a great addition to the Angel Food cake or simply over a nice vanilla ice cream.
