Rock out with your Crock(pot) out!

1I know, I know. I have been living under a rock (or crock!) for a while now. I had a crock pot years ago, bought a cook book, and returned it all because I couldn’t find a recipe I liked. Maybe I had a super sophisticated palette at the time – just kidding, I just really thought everything had to be a soup or a stew to come out of a crock pot!  But today that crock and I are BFF’s.

One of my all time favorite things to cook in the crockpot are short ribs. This recipe is so yummy! I serve this with corn tortillas and a slaw.

3lbs short ribs

3/4 cup soy sauce (low sodium)

1/2 honey

1/3 apple cider vinegar

5 gloves of garlic

2 tsp. of ground ginger or 1 inch of peeled and minced root

You can absolutely add crushed pepper or a pepper sauce to spice things up!

I cooked these for 7-8 hours on high (flipping half way through). Honestly I felt so proud after this dinner, the thought of opening a restaurant crossed my mind! (Imagine?!)

roastIt was so mom of me, but I made my first ever POT ROAST too!

1/4 c. of dijon mustard, 1 1/2 c. beef broth, 1 tsp. rosemary, thyme, garlic salt (you can also use a package of soup mix!). I did brown all sides of the roast in a pan on top of the stove before cutting an onion and a few carrots to place the 3-4lb roast on top of to cook for 8 hours. I don’t care for cooked, mushy potatoes so I opted to roast mine separate but feel free to add them to the pot if you prefer them that way!

Another EASY recipe is a whole chicken in the crock.

I laid a few carrots and onions on the bottom and placed the whole bird on top; rubbed with garlic, pepper, thyme and set to cook for 6 hours. It was falling off the bone and so juicy.
