My Oatmeal-Filled Day

Did you know that there is such a thing as National Oatmeal Day? Guess what? I didn’t either, however, upon discovering this I went on an oat-filled adventure. This may not be the official National Oatmeal Day but I will pay tribute to the day today!

Before we get into my delicious day, here is what I found out about oatmeal; 

  • Oatmeal is a whole grain
  • Oatmeal reduces cholesterol
  • Oatmeal is good for your heart
  • Oatmeal contains unique antioxidants
  • A hearty bowl of oatmeal can keep you full until lunch…

Let’s take a walk down oat lane, I have always heard the saying “oatmeal is a great way to start your day.” I agree!

Breakfast

Overnight oats – oats, oat milk, flaxseed meal, vanilla, strawberries, a pinch of salt and cinnamon. I let this sit overnight. This is such an easy meal and the convenience is also a winning factor for me. Add coconut sugar and more strawberries for topping or feel free to substitute fruits and nuts of your choice. Snack

Peanut Butter Oat Squares. This three ingredient snack is not only delicious but very easy to make. Just think about it, an activity with the little ones or something quick to throw together when you are really busy. 

  1. Peanut Butter
  2. Honey 
  3. Oats

Melt honey and some peanut butter together on the stove top or in the microwave. Simply stir in oatmeal and pour into a container or pan of your choice. Leave at room temperature to set or chill in the refrigerator. That’s it, enjoy!

Lunch

For lunch I opted for a smoothie, do you see the trend of quick and easy that I am following here? I did my own version of Green and Tonic’s mylky way smoothie adding oats to the mix. I throw all ingredients in my blender with no finesse or layer almond milk, dates, frozen bananas, almond butter, cacao powder sprinkle cinnamon at the end (optional). 

Snack

This is another no bake snack that the kids will also enjoy making. This is all relative to your personal preference. 

  1. Oats
  2. Hemp Seeds
  3. Peanut Butter
  4. Honey 
  5. Vanilla 
  6. White Chocolate Chunks

Mix all ingredients in a bowl and refrigerator for 20-30 minutess. Then remove from the refrigerator. Use a spoon or your hands and make the desired size balls and ENJOY!

Dinner

This is where things got a little iffy, after googling several savory options for an oatmeal dinner choice, I decided to play it safe and make granola croutons to top a simple salad of greens, heirloom tomatoes, and a garlic dressing.

Old fashion oats, walnuts, sunflower seeds, sea salt, grape-seed oil, 1 egg white and honey (mix well) and bake for 30 minutes at 350F stirring once.

I eyeball everything I make. For those who are gluten free, there are tons of gluten free options. Also if you have a nut allergy there are substitute butters as well.
